Mango Protein Shake
Mangos have many health benefits. They are rich in fat-soluble antioxidants
called carotenoids, vitamin C and potassium. This delicious shake serves
as a great snack, or meal replacement.
Ingredients:
1 cup mango cubes, fresh or frozen
6-8 ice cubes
3/4 cup organic vanilla yogurt
Splash of orange juice
1 scoop vanilla whey protein powder |
Directions:
Combine ingredients and blend until smooth. |
Citrus Salad with Bibb Lettuce, Watercress and Balsamic Dressing
This healthy citrus salad serves as a delicious accompaniment to grilled
fish or chicken. Makes 4 servings
Ingredients:
1 medium pink Florida grapefruit, peeled, white pith removed and
sectioned
2 large Florida oranges, peeled, white pith removed and sectioned
2 tangerines, peeled and sectioned
1 bunch watercress, rinsed and patted dry
3 tablespoons fresh orange juice |
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1 tablespoon canola or vegetable oil
1 large head Bibb lettuce, separated, rinsed and patted dry
Peel of 1 Florida orange, cut into julienne strips |
Directions:
- Combine grapefruit, oranges, tangerines and watercress in medium
bowl.
- Combine orange juice, vinegar and salt in small bowl. Add oil;
whisk dressing until combined. Pour over fruit and watercress;
gently toss.
- Line 4 serving plates with lettuce. Divide fruit mixture among
plates. Garnish each with orange peel.

seafood Pasta with plum tomato sauce
Angel hair pasta is best served with a thin, delicate sauce such as this
delicious one, which uses fresh plum tomatoes and fresh seafood.
Makes 6-8 servings
Ingredients:
1/2 pound white fish, such as sea bass, monkfish or grouper
2 teaspoons olive oil
1/2 cup chopped onion
3 cloves garlic, minced
3 pounds fresh plum tomatoes, seeded and chopped
1/4 cup chopped fresh basil
2 tablespoons chopped fresh oregano |
1 teaspoon red pepper flakes
1/2 teaspoon sugar
2 bay leaves
1/2 pound fresh bay scallops
1/2 pounds fresh shrimp
8-12 ounces uncooked angel hair pasta
2 tablespoons chopped fresh parsley |
Directions:
- Cut fish into 3/4-inch pieces. Set aside.
- Heat oil in large nonstick skillet over medium heat; add onion
and garlic. Cook and stir 3 minutes or until onion is tender.
Reduce heat to low; add tomatoes, basil, oregano, red pepper flakes,
sugar and bay leaves. Cook, uncovered, 15 minutes, stirring occasionally.
- Add whitefish, scallops and shrimp. Cook, uncovered, 3 to 4
minutes or until fish flakes easily when tested with fork and
scallops are opaque. Remove bay leaves; discard. Set seafood sauce
aside.
- Cook pasta according to package directions, omitting salt.
Drain well.
- Combine pasta with seafood sauce in large serving bowl. Mix
well. Sprinkle with parsley. Serve immediately.

Artichoke Bruschetta
Makes 4 servings
Ingredients:
1 jar (6 ounces) marinated artichoke hearts, drained and chopped
3 green onions, chopped
5 tablespoons fresh grated parmesan cheese |
2 tablespoons mayonnaise
12 slices French bread, sliced 1/2 inch thick
1 tablespoon olive oil |
Directions:
- Preheat broiler. Combine artichokes, green onions, 3 tablespoons
cheese and mayonnaise in small bowl. Mix well and set aside.
- Arrange bread slices on baking sheet. Brush with olive oil
and broil 4 to 5 inches from heat 2 to 3 minutes on each side
or until lightly browned.
- Spoon about 1 tablespoon artichoke mixture onto each bread
slice; sprinkle with remaining 2 tablespoons cheese. Broil 1 to
2 minutes or until cheese is melted and lightly browned.
